Ingredients
Scale
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 1 cup Biscoff cookie spread
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup chocolate chips (dark or semi-sweet)
- 1/2 cup crushed Biscoff cookies (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy. Add the eggs and vanilla, mixing well.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
- Fold in the Biscoff cookie spread and chocolate chips until evenly distributed. Optionally, add crushed Biscoff cookies for extra crunch.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For a more intense flavor, consider chilling the dough for 30 minutes before baking.
- Store cookies in an airtight container at room temperature for up to a week.
