Ingredients
Scale
- 2 boneless chicken breasts, cut into bite-sized cubes
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp cumin
- Salt and pepper, to taste
- 4 cups mixed greens (spinach, arugula, etc.)
- 1 cucumber, sliced
- 1 bell pepper, sliced
- 1/2 red onion, thinly sliced
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 2 tbsp balsamic vinegar
- 1 tbsp honey
- 1 tsp Dijon mustard
Instructions
- Preheat your grill to medium-high heat and lightly oil the grates.
- Season the chicken: In a bowl, mix olive oil, paprika, garlic powder, onion powder, cumin, salt, and pepper. Toss the chicken cubes in the seasoning until evenly coated.
- Assemble the skewers: Thread the chicken cubes onto skewers, alternating with bell pepper and onion slices.
- Grill the chicken: Place the skewers on the grill, cooking for 5-7 minutes per side, until the chicken reaches an internal temperature of 165°F (74°C).
- Prepare the salad: In a large bowl, combine mixed greens, cucumber, cherry tomatoes, avocado, and red onion.
- Make the dressing: In a small bowl, whisk together balsamic vinegar, honey, Dijon mustard, salt, and pepper.
- Assemble the salad: Remove the chicken from the skewers and add to the salad. Drizzle the dressing over the top and toss gently.
- Serve immediately, and enjoy!
Notes
- Chicken options: You can substitute chicken breasts with thighs for a juicier, more flavorful option.
- Make-ahead tip: Prepare the salad ingredients in advance, but add the avocado and dressing just before serving to prevent wilting.
- Vegetable variations: Feel free to add other veggies like grilled zucchini, corn, or even roasted sweet potatoes for extra flavor.
