  • 1 cucumber, sliced
  • 1 bell pepper, sliced
  • 1/2 red onion, thinly sliced
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard

Instructions

  1. Preheat your grill to medium-high heat and lightly oil the grates.
  2. Season the chicken: In a bowl, mix olive oil, paprika, garlic powder, onion powder, cumin, salt, and pepper. Toss the chicken cubes in the seasoning until evenly coated.
  3. Assemble the skewers: Thread the chicken cubes onto skewers, alternating with bell pepper and onion slices.
  4. Grill the chicken: Place the skewers on the grill, cooking for 5-7 minutes per side, until the chicken reaches an internal temperature of 165°F (74°C).
  5. Prepare the salad: In a large bowl, combine mixed greens, cucumber, cherry tomatoes, avocado, and red onion.
  6. Make the dressing: In a small bowl, whisk together balsamic vinegar, honey, Dijon mustard, salt, and pepper.
  7. Assemble the salad: Remove the chicken from the skewers and add to the salad. Drizzle the dressing over the top and toss gently.
