Description
For the Caramelized Onions and Mushrooms
2 tablespoons olive oil
1 large onion (sliced)
8 ounces mushrooms (sliced, such as cremini or button)
2 tablespoons balsamic vinegar
Salt and pepper to taste
For the Mac ‘n’ Cheese
8 ounces elbow macaroni (or pasta of choice)
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk (whole or 2%)
2 cups shredded cheese (cheddar, Gruyère, or a mix)
1 teaspoon garlic powder
1 teaspoon Dijon mustard
Salt and pepper to taste
Fresh parsley (for garnish)
Ingredients
Caramelize Onions and Mushrooms: In a skillet, heat olive oil over medium heat. Add sliced onions and cook, stirring occasionally, for about 10-15 minutes until golden brown. Add sliced mushrooms, balsamic vinegar, salt, and pepper. Cook for another 5-7 minutes until mushrooms are tender and liquid evaporates. Set aside.
Cook Pasta: Cook macaroni according to package instructions until al dente. Drain and set aside.
Make Cheese Sauce: In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Gradually add milk, whisking until smooth. Cook until thickened, about 5 minutes. Stir in cheese, garlic powder, Dijon mustard, salt, and pepper until cheese is melted and sauce is creamy.
Combine: Fold the cooked macaroni, caramelized onions, and mushrooms into the cheese sauce. Stir until well combined.
Serve: Garnish with fresh parsley before serving.
Instructions
For added texture, top with breadcrumbs and broil for a few minutes until golden.
