Instructions
- Preheat oven to 400°F (200°C).
- Prepare the sausages: If using raw sausages, leave them whole or slice them into chunks for easier serving. Place on a large, rimmed baking sheet.
- Prepare the vegetables: Slice the bell peppers and onion into strips, and place them on the baking sheet with the sausages. Add minced garlic.
- Season: Drizzle the olive oil over the sausages and vegetables. Sprinkle with dried oregano, basil, red pepper flakes (if using), salt, and pepper. Toss everything gently to coat in the oil and seasonings.
- Roast: Place the baking sheet in the oven and roast for 30-35 minutes, flipping the sausages and stirring the vegetables halfway through. The sausages should reach an internal temperature of 160°F (for chicken/turkey sausages) or 165°F (for pork sausages), and the peppers should be tender and caramelized.
- Serve: Once done, remove the sheet from the oven. Slice the sausages (if not already done), and serve the sausages and peppers on a platter. Garnish with fresh parsley if desired.
