Instructions

  1. Prepare the Crust:
    Preheat your oven to 325°F (160°C). In a mixing bowl, combine gingersnap cookie crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes. Allow it to cool.
  2. Make the Cheesecake Filling:
    In a large bowl, beat the softened cream cheese until smooth. Gradually add the sugar and mix until creamy. Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract, pumpkin puree, and spices (cinnamon, nutmeg, ginger, cloves, and salt) until well combined.

    Pour the cheesecake batter over the cooled crust. Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for about 1 hour. Afterward, refrigerate for at least 4 hours or overnight.
