- 1 cup graham cracker crumbs

- 1 tsp lemon juice
For the cheesecake filling:
- 8 oz cream cheese, softened
- 1/2 cup sugar

- 1 large egg
Instructions
- Prepare the Crust: Preheat your oven to 325°F (160°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture firmly into the bottom of a greased mini muffin tin.
- Make the Apple Filling: In a saucepan over medium heat, combine diced apples, brown sugar, cinnamon, and lemon juice. Cook for about 5 minutes until apples are slightly tender. Remove from heat and set aside.
- Prepare the Cheesecake Filling: In a mixing bowl, beat softened cream cheese, sugar, and vanilla until smooth. Add the egg and mix until fully combined.
- Assemble the Bites: Spoon a small amount of the apple filling into each crust, then top with the cheesecake mixture, filling each cup about 3/4 full.
- Bake: Bake for 15-18 minutes, or until the cheesecake is set but still slightly jiggly in the center. Allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
- Chill and Serve: Refrigerate for at least 2 hours before serving for the best texture. Enjoy chilled!
