  • For the bread:
    • 2 cups all-purpose flour
    • 1 tsp baking soda
    • 1 tsp ground cinnamon
    • ½ tsp salt
    • 2 large eggs
    • 1 cup granulated sugar
    • ½ cup unsalted butter, softened
    • 1 tsp vanilla extract
    • ½ cup sour cream
    • 2 cups peeled and diced apples (about 2 medium apples)
    • 1/2 cup chopped walnuts or pecans (optional)
  • For the apple filling:
    • 1 ½ cups peeled and diced apples (about 1-2 apples)
    • 2 tbsp granulated sugar
    • 1 tsp ground cinnamon
  • For the topping (optional):
    • 2 tbsp brown sugar
    • 1 tsp ground cinnamon

Instructions

  • Preheat and Prepare the Pan: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.
  • Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.
  • Make the Bread Batter: In a separate bowl, beat together the sugar and softened butter until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream until fully combined.
  • Combine the Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Do not overmix. Gently fold in the diced apples and chopped nuts (if using).
  • Prepare the Apple Filling: In a small bowl, toss the diced apples with sugar and cinnamon. Set aside.
  • Layer the Bread: Pour half of the bread batter into the prepared pan, then spoon half of the apple filling over the batter. Add the remaining batter and top with the rest of the apple filling.
  • Add the Topping (Optional): For a sweet cinnamon topping, mix brown sugar and cinnamon, then sprinkle it over the top of the batter before baking.
  • Bake: Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean. If the bread starts to brown too quickly, cover it loosely with aluminum foil.
  • Cool and Serve: Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and enjoy!

Notes

  • Apple Variety: For the best results, use a mix of sweet and tart apples such as Fuji, Gala, or Granny Smith. Granny Smith apples will give a nice tartness that complements the sweetness of the bread.
  • Storage: Store the bread in an airtight container at room temperature for up to 3 days. For longer storage, slice and freeze individual portions for up to 3 months. Thaw at room temperature before serving.
