For the Crust:
- 1 cup graham cracker crumbs
- 2 tablespoons granulated sugar
- 5 tablespoons unsalted butter, melted
For the Cheesecake Filling:
- 16 ounces cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
For the Apple Topping:
- 2 cups apples, peeled and diced (Granny Smith or Honeycrisp work well)
- ¼ cup granulated sugar
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
Instructions
- Prepare the Crust:
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined.
- Line a 12-cup muffin tin with cupcake liners and press about 2 tablespoons of the mixture into the bottom of each liner. Bake for 5-7 minutes until golden. Remove and let cool.
- Make the Cheesecake Filling:
- In a large mixing bowl, beat the softened cream cheese and sugar until smooth.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, cinnamon, and nutmeg.
- Pour the cheesecake filling over the cooled crusts, filling each liner about three-quarters full.
- Prepare the Apple Topping:
- In a separate bowl, combine the diced apples, sugar, cinnamon, lemon juice, and cornstarch. Toss until the apples are well coated.
- Spoon the apple mixture evenly over the cheesecake filling.
- Bake:
- Bake in the preheated oven for 20-25 minutes, until the edges are set but the center has a slight jiggle.
- Remove from the oven and let cool in the muffin tin for about 10 minutes. Then transfer to a wire rack to cool completely. Refrigerate for at least 2 hours before serving.
