Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- Make the Crumb Topping: In a bowl, mix ½ cup flour, ½ cup brown sugar, and 1 tsp cinnamon. Add ¼ cup softened butter and mix until crumbly. Set aside.
- Mix Dry Ingredients: In a large bowl, whisk together 1 ½ cups flour, 1 cup sugar, baking powder, baking soda, salt, and 1 tsp cinnamon.
- Combine Wet Ingredients: In another bowl, whisk together 2 eggs, melted butter, buttermilk, and vanilla.
- Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped apples.
- Fill Muffin Tin: Spoon the batter into the muffin cups, filling each about two-thirds full. Top with the crumb topping.
- Bake: Bake for 18-22 minutes or until a toothpick comes out clean. Let cool for a few minutes before transferring to a wire rack.
