  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • 2 large eggs
  • ½ cup unsalted butter, melted
  • ½ cup buttermilk
  • 1 tsp vanilla extract
  • 1 ½ cups apples, peeled and chopped

For the Crumb Topping:

  • ½ cup all-purpose flour
  • ½ cup brown sugar, packed
  • 1 tsp ground cinnamon
  • ¼ cup unsalted butter, softened

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  • Make the Crumb Topping: In a bowl, mix ½ cup flour, ½ cup brown sugar, and 1 tsp cinnamon. Add ¼ cup softened butter and mix until crumbly. Set aside.
  • Mix Dry Ingredients: In a large bowl, whisk together 1 ½ cups flour, 1 cup sugar, baking powder, baking soda, salt, and 1 tsp cinnamon.
  • Combine Wet Ingredients: In another bowl, whisk together 2 eggs, melted butter, buttermilk, and vanilla.
  • Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped apples.
  • Fill Muffin Tin: Spoon the batter into the muffin cups, filling each about two-thirds full. Top with the crumb topping.
  • Bake: Bake for 18-22 minutes or until a toothpick comes out clean. Let cool for a few minutes before transferring to a wire rack.
