    • 1 ½ cups all-purpose flour

    • ½ cup sour cream
    • ½ cup unsalted butter, melted
    • 1 teaspoon vanilla extract
  • For the Apple Cinnamon Filling:
    • 2 medium apples, peeled and diced (such as Granny Smith)
    • 1 tablespoon sugar
    • 1 teaspoon ground cinnamon
  • For the Crumb Topping:
    • ½ cup all-purpose flour
    • ½ cup brown sugar, packed
    • 1 teaspoon ground cinnamon
    • ¼ cup unsalted butter, cold and cubed

Instructions

  • Preheat Oven & Prepare Pan: Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round or square baking pan.
  • Prepare the Apple Filling: In a small bowl, toss the diced apples with 1 tablespoon sugar and 1 teaspoon cinnamon. Set aside.
  • Make the Cake Batter: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt. In a separate bowl, mix the eggs, sour cream, melted butter, and vanilla. Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Assemble the Cake: Pour half of the batter into the prepared pan. Evenly spread the apple mixture on top, then spoon the remaining batter over the apples. Gently spread the batter to cover the apples.
  • Make the Crumb Topping: In a small bowl, combine the flour, brown sugar, and cinnamon. Cut in the cold butter until the mixture resembles coarse crumbs. Sprinkle the topping evenly over the batter.
  • Bake the Cake: Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before transferring to a wire rack.

Notes

  • For a richer flavor, you can substitute the sour cream with plain yogurt.
  • Add nuts like walnuts or pecans to the crumb topping for an extra crunch.
