  • 2 medium eggplants, sliced into ½-inch rounds
  • 1 cup Italian-seasoned breadcrumbs
  • 1 cup marinara sauce
  • 8 oz fresh mozzarella cheese, sliced
  • 1 cup fresh basil leaves
  • ½ cup all-purpose flour
  • 2 large eggs
  • Olive oil for frying

Instructions

  1. Slice the eggplants and sprinkle salt over them to draw out moisture. Let them sit for about 30 minutes.
  2. Set up a breading station with flour in one bowl, beaten eggs in another, and breadcrumbs in a third.
  3. Dredge each eggplant slice in flour, dip it in eggs, then coat with breadcrumbs.
  4. Heat enough olive oil in a skillet over medium heat to cover the bottom. Fry the breaded eggplant slices until golden brown on both sides (about 3 minutes per side).
  5. Assemble the sliders by layering fried eggplant slices on mini buns with marinara sauce and mozzarella cheese. Broil until bubbly.
