  • 3 tbsp strong brewed coffee

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, and sugar until combined.
  3. In another bowl, beat eggs, milk, vanilla extract, and dissolved coffee until smooth.
  4. Pour wet ingredients into dry ingredients and gently fold until just combined.
  5. Fill cupcake liners about two-thirds full and bake for 18–20 minutes or until a toothpick comes out clean.
  6. Cool on a wire rack while preparing the frosting by beating softened butter until creamy. Gradually mix in powdered sugar, cocoa powder, and brewed coffee to achieve desired consistency.
  7. Frost cooled cupcakes generously and serve at your celebration.
