  • 1/2 cup unsalted butter (cold, cubed)
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 cup fresh strawberries (chopped)
  • 1 cup fresh rhubarb (diced)
  • 2 large eggs
  • 2 tbsp lemon juice

Instructions

  1. Preheat oven to 350°F (180°C) and grease a 9×9-inch baking dish.
  2. In a bowl, mix flour, granulated sugar, and cold butter using a pastry cutter until crumbly. Press into the bottom of the baking dish.
  3. In another bowl, combine chopped strawberries, diced rhubarb, brown sugar, lemon juice, and eggs. Mix well to create the filling.
  4. Pour the filling evenly over the prepared crust.
  5. Bake for 40-45 minutes until set and slightly golden on top.
  6. Allow to cool completely before slicing into bars for serving.
