Ingredients
- 3–4 boneless skinless chicken breasts (about 1.5 lbs)
- 8 oz cream cheese
- 2 cups low-sodium chicken broth
- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 can (15 oz) black beans, rinsed and drained
- 1 medium onion, chopped
- 1 cup bell peppers (mixed colors), chopped
- 2 tsp chili powder
- 1 tsp cumin
- Salt & pepper to taste
Instructions
- Place chicken breasts at the bottom of the crock pot.
- Layer diced tomatoes, black beans, onion, bell peppers, chili powder, cumin, salt, and pepper over the chicken.
- Pour chicken broth until ingredients are just covered.
- Cover and cook on high for 4 hours or low for 6 hours.
- Stir in cream cheese until melted and combined.
- Serve in bowls, garnished with fresh cilantro or shredded cheese.
