  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp Italian seasoning

Instructions

  1. Cook linguine according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  2. In a skillet over medium heat, add olive oil and sauté shrimp seasoned with salt and pepper for about 2-3 minutes per side until pink. Remove from skillet.
  3. In the same skillet, sauté garlic and sun-dried tomatoes for one minute. Pour in heavy cream and bring to a gentle simmer.
  4. Stir in spinach until wilted, then gradually add Parmesan cheese while mixing well.
  5. Combine cooked shrimp and drained linguine into the sauce, tossing until well-coated. Adjust consistency with reserved pasta water if needed.
  6. Serve garnished with extra Parmesan cheese.
