  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 1 cup roasted red peppers, chopped
  • 3 cups fresh spinach
  • 1 cup shredded mozzarella cheese

  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a medium bowl, combine chopped roasted red peppers, spinach, mozzarella cheese, minced garlic, salt, and pepper. Mix well.
  3. Create pockets in each chicken breast using a sharp knife and stuff them with the filling mixture.

  5. Sear the stuffed chicken in an oven-safe skillet over medium-high heat for about 4-5 minutes per side until golden brown.
  6. Transfer the skillet to the oven and bake for 20-25 minutes until the internal temperature reaches 165°F (75°C).
  7. Allow the chicken to rest for five minutes before serving.
