  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup strong brewed coffee
  • 1/2 cup shelled pistachios, finely chopped

Instructions

  1. Preheat oven to 325°F (160°C) and line a muffin tin with cupcake liners.
  2. In a bowl, mix crushed graham crackers, melted butter, and sugar until it resembles damp sand. Press this mixture into the bottom of each muffin liner.
  3. Beat the cream cheese until smooth in another bowl. Gradually add sugar and mix in eggs one at a time, then add vanilla and brewed coffee.
  4. Fold in the finely chopped pistachios. Spoon the filling into each crust until three-quarters full.
  5. Bake for 20-25 minutes or until set but slightly jiggly in the center.
