  • 2 cups vegetable broth
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup bell peppers, diced (mixed colors)
  • 1 tsp ground cumin
  • ¼ cup fresh cilantro, chopped
  • 2 tbsp olive oil
  • Salt to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until soft and translucent (about 5 minutes). Stir in minced garlic for an additional minute.
  2. Add the long-grain rice to the pot and toast it slightly for about 2 minutes while stirring.
  3. Pour in the vegetable broth and add a pinch of salt. Bring to a boil.
  4. Once boiling, reduce the heat to low, cover, and let it simmer undisturbed for 15-20 minutes.
  5. After cooking, fluff the rice with a fork and mix in diced bell peppers and cumin.
  6. Remove from heat, cover again, and let sit for 5 minutes. Fold in fresh cilantro just before serving.
