Perfect Stuffed Turkey Breast Recipe

  • Author: Linda BEVERLY
  • Total Time: 2 hours 5 minutes
  • Yield: 6-8 servings 1x

Description

A flavorful, savory stuffed turkey breast filled with a delicious blend of herbs, vegetables, and optional fruits or nuts. Perfect for holiday meals or any special occasion, this dish offers tender turkey meat and a comforting stuffing all in one.

Ingredients

Scale
  • 1 boneless turkey breast (about 45 lbs)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup bread crumbs
  • ½ cup finely chopped onions
  • 1 cup diced celery
  • 1 cup chopped mushrooms (optional)
  • ½ cup chicken broth
  • 1 tbsp fresh rosemary (or 1 tsp dried)
  • 1 tbsp fresh thyme (or 1 tsp dried)
  • 1 cup chopped spinach or kale
  • 1 cup dried cranberries or raisins (optional)
  • ½ cup chopped walnuts or pecans (optional)
  • 1 egg (for binding)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking dish with parchment paper or lightly grease it with cooking spray.
  2. Prepare the Stuffing: In a large skillet, heat 1 tbsp of olive oil over medium heat. Add the onions, celery, and mushrooms (if using), and sauté until softened, about 5 minutes. Stir in the spinach, rosemary, thyme, salt, and pepper. Cook for another 2 minutes, then remove from heat and let cool.
  3. Prepare the Turkey Breast: Lay the turkey breast flat on a cutting board, skin side down. If necessary, butterfly the breast by slicing horizontally to open it up like a book, creating a large, even piece of meat.
  4. Stuff the Turkey: In a bowl, mix the sautéed vegetables with bread crumbs, chicken broth, dried cranberries or raisins, and nuts. Add the egg and stir until well combined. Spread this stuffing evenly over the turkey breast, leaving a small border around the edges.
  5. Roll and Tie: Carefully roll the turkey breast into a log shape, securing the stuffing inside. Use kitchen twine to tie the ends and middle of the roll to hold the shape during cooking.
  6. Roast: Rub the outside of the turkey breast with olive oil, then season with salt and pepper. Place the rolled turkey breast in the prepared baking dish and roast in the oven for 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C) when checked with a meat thermometer.
  7. Rest and Slice: Let the turkey rest for 10-15 minutes before slicing to allow the juices to redistribute. Serve with your favorite side dishes and enjoy!

Notes

  • Stuffing Variations: Feel free to customize your stuffing with other ingredients like sautéed bell peppers, garlic, or different herbs such as sage or parsley. For a more indulgent version, add cheese such as mozzarella or Parmesan to the stuffing mixture.
  • Bone-in Option: If you prefer a bone-in turkey breast, just make sure to adjust the cooking time accordingly (it may take slightly longer).
  • Resting the Turkey: Letting the stuffed turkey rest after cooking is crucial for maintaining moisture and ensuring the stuffing stays intact.
