  • 8 oz (about 2 cups) penne pasta
  • 1 cup sun-dried tomatoes, drained and chopped
  • 3 cloves garlic, minced
  • 2 cups vegetable broth (or chicken broth)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Fresh basil or parsley, for garnish

Instructions

  1. Sauté Garlic and Sun-Dried Tomatoes: In a large pot, heat olive oil over medium heat. Add the minced garlic and sun-dried tomatoes. Sauté for 2-3 minutes until fragrant.
  2. Add Pasta and Liquid: Pour in the vegetable broth and bring it to a boil. Once boiling, add the penne pasta. Reduce the heat to medium-low and simmer, stirring occasionally, until the pasta is al dente (about 10-12 minutes).
  3. Make It Creamy: Once the pasta is cooked, stir in the heavy cream, Parmesan cheese, dried basil, and season with salt and pepper to taste. Cook for another 2-3 minutes until the sauce thickens and the cheese melts into the pasta.
  4. Serve: Remove from heat. Serve hot, garnished with fresh basil or parsley. Enjoy!

Notes

  • For a dairy-free version, swap the heavy cream with coconut cream and use dairy-free Parmesan or nutritional yeast.
