Description
A creamy, tangy, and simple pasta dish made in one pot. This easy meal combines sun-dried tomatoes, garlic, and Parmesan for an irresistible flavor. Perfect for busy weeknights!
Ingredients
Scale
- 8 oz (about 2 cups) penne pasta
- 1 cup sun-dried tomatoes, drained and chopped
- 3 cloves garlic, minced
- 2 cups vegetable broth (or chicken broth)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp dried basil
- Salt and pepper to taste
- Fresh basil or parsley, for garnish
Instructions
- Sauté Garlic and Sun-Dried Tomatoes: In a large pot, heat olive oil over medium heat. Add the minced garlic and sun-dried tomatoes. Sauté for 2-3 minutes until fragrant.
- Add Pasta and Liquid: Pour in the vegetable broth and bring it to a boil. Once boiling, add the penne pasta. Reduce the heat to medium-low and simmer, stirring occasionally, until the pasta is al dente (about 10-12 minutes).
- Make It Creamy: Once the pasta is cooked, stir in the heavy cream, Parmesan cheese, dried basil, and season with salt and pepper to taste. Cook for another 2-3 minutes until the sauce thickens and the cheese melts into the pasta.
- Serve: Remove from heat. Serve hot, garnished with fresh basil or parsley. Enjoy!
Notes
- For a dairy-free version, swap the heavy cream with coconut cream and use dairy-free Parmesan or nutritional yeast.
- If you prefer a bit of spice, add red pepper flakes or a splash of hot sauce when sautéing the garlic.
- Customize with vegetables like spinach, peas, or roasted bell peppers for added color and nutrition.
