Ingredients
Scale
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/2 cup rolled oats
- 1/2 cup chopped pecans (optional)
- 1/2 cup mini chocolate chips or dried cranberries (optional)
Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream the butter and sugars: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
- Add eggs and vanilla: Beat in the eggs one at a time, then add the vanilla extract. Mix until combined.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and ginger.
- Mix dry ingredients into wet ingredients: Gradually add the dry ingredients to the butter mixture and stir until just combined.
- Add oats, nuts, and chocolate chips: Fold in the oats, chopped pecans (if using), and mini chocolate chips or dried cranberries for added texture and flavor.
- Scoop dough: Use a cookie scoop or tablespoon to portion dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake: Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.
- Cool: Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- For an extra festive touch, sprinkle the cookies with a little sea salt just after baking.
- You can swap out the pecans for walnuts or omit them entirely for a nut-free option.
- If you prefer a chewier cookie, slightly underbake them, and if you want a crispier texture, bake for an extra minute or two.
