  • 2 large eggs

Instructions

  • Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • Cream the butter and sugars: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
  • Add eggs and vanilla: Beat in the eggs one at a time, then add the vanilla extract. Mix until combined.
  • Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and ginger.
  • Mix dry ingredients into wet ingredients: Gradually add the dry ingredients to the butter mixture and stir until just combined.
  • Add oats, nuts, and chocolate chips: Fold in the oats, chopped pecans (if using), and mini chocolate chips or dried cranberries for added texture and flavor.
  • Scoop dough: Use a cookie scoop or tablespoon to portion dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Bake: Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.
  • Cool: Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes
