Instructions

  1. Prepare the Cake: Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan. In a large mixing bowl, beat together butter and sugar until creamy. Add eggs one at a time, followed by vanilla extract. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the butter mixture, alternating with buttermilk, and mix until smooth.
  2. Add Fruit: Gently fold in the chopped apples and blackberries, ensuring they’re evenly distributed throughout the batter. Pour the batter into the prepared cake pan.
  3. Make the Crumble: In a small bowl, combine oats, flour, brown sugar, cinnamon, and melted butter. Mix until crumbly. Sprinkle the crumble topping evenly over the cake batter.
  4. Bake: Place the cake in the preheated oven and bake for 45–50 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
