- Crust:
- 1 ½ cups graham cracker crumbs
- 6 tbsp unsalted butter, melted
- 2 tbsp granulated sugar
- Filling:
- 3 (8 oz) packages cream cheese, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 cup mashed ripe bananas
- 1 tsp vanilla extract
- Topping:
- ½ cup caramel sauce
- ½ cup chopped walnuts or pecans
Instructions
- Prepare the Crust:
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of a springform pan. Bake for 8 minutes and let cool.
- Make the Filling:
- Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Stir in mashed bananas and vanilla.
- Pour the mixture over the crust and smooth the top.
- Bake the Cheesecake:
- Bake for 45–50 minutes or until the center is just set. Allow to cool completely before refrigerating for at least 4 hours or overnight.
- Add the Topping:
- Drizzle caramel sauce over the chilled cheesecake. Sprinkle with chopped nuts.
