This delicious and versatile Frittata is the perfect dish for breakfast, brunch, or dinner. Packed with eggs, fresh vegetables, and your choice of cheese or meats, it’s a great way to use up leftovers while creating a nutritious and satisfying meal.


Ingredients

  • 6 large eggs
  • 1/2 cup milk (or cream for a richer taste)
  • 1 cup mixed vegetables (like bell peppers, spinach, and onions)
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh herbs (optional, for garnish)

Instructions

  • Preheat the oven to 375°F (190°C).
  • Heat olive oil in an ovenproof skillet over medium heat. Add the vegetables and sauté until softened, about 5 minutes.
  • In a bowl, whisk together eggs, milk, salt, and pepper.
  • Pour the egg mixture over the cooked vegetables in the skillet. Sprinkle with cheese and cook on the stove for 2-3 minutes until the edges begin to set.
  • Transfer the skillet to the oven and bake for 15 minutes or until the frittata is fully set and golden on top.
  • Let it cool slightly, slice, and serve warm. Garnish with fresh herbs if desired.

Notes

  • You can add bacon, sausage, or even leftover chicken for extra protein.
  • For a vegetarian option, skip the meat and add extra veggies.
