Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in an ovenproof skillet over medium heat. Add the vegetables and sauté until softened, about 5 minutes.
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Pour the egg mixture over the cooked vegetables in the skillet. Sprinkle with cheese and cook on the stove for 2-3 minutes until the edges begin to set.
- Transfer the skillet to the oven and bake for 15 minutes or until the frittata is fully set and golden on top.
- Let it cool slightly, slice, and serve warm. Garnish with fresh herbs if desired.
