  • 1 pie crust (store-bought or homemade)
  • 4 ripe peaches, peeled and sliced
  • 1 cup heavy cream
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the pie crust: Place the pie crust in a pie dish, pressing it gently into place. Prick the bottom with a fork and bake for 10-12 minutes, or until golden. Let it cool.
  3. Prepare the cream filling: In a bowl, beat together heavy cream, cream cheese, powdered sugar, and vanilla extract until smooth and fluffy.
  4. Add the peaches: Gently fold in the lemon juice with the sliced peaches.
  5. Assemble the pie: Spread the cream mixture into the cooled pie crust, then layer the peaches on top.
  6. Chill: Refrigerate the pie for at least 2 hours to set the filling before serving.

Notes

  • For extra sweetness, you can drizzle a bit of honey or maple syrup over the peaches before serving.
  • If fresh peaches aren’t available, you can use canned peaches, but be sure to drain them well to avoid excess liquid.
