Ingredients

Scale
  • For the Crumb Topping:
    • 1 1/2 cups old-fashioned rolled oats
    • 1 cup all-purpose flour
    • 3/4 cup brown sugar, packed
    • 1/2 teaspoon ground cinnamon
    • 1/4 teaspoon salt
    • 1/2 cup unsalted butter, melted
  • For the Apple Filling:
    • 3 medium apples (peeled, cored, and diced)
    • 1 tablespoon lemon juice
    • 2 tablespoons granulated sugar
    • 1/2 teaspoon ground cinnamon
    • 1 tablespoon cornstarch

Instructions

  • Prepare the Topping:
Preheat your oven to 350°F (175°C). In a medium-sized bowl, combine the oats, flour, brown sugar, cinnamon, and salt. Add melted butter and mix until everything is well combined and crumbly.
  • Prepare the Apple Filling:
In a separate bowl, toss the diced apples with lemon juice, sugar, cinnamon, and cornstarch. This will help thicken the apple mixture and enhance the flavor.
  • Assemble the Bars:
Press half of the oat mixture into the bottom of a greased 9×9-inch baking pan, creating an even base. Spread the apple filling over the oat crust. Then, crumble the remaining oat mixture on top of the apples, covering them evenly.
  • Bake the Bars:
Place the pan in the preheated oven and bake for 40-45 minutes, or until the topping is golden brown and the apple filling is bubbly.
  • Cool and Serve:
Let the bars cool in the pan for about 30 minutes before cutting into squares. This helps the filling set and makes it easier to cut.

Notes

  • For a touch of extra flavor, you can add chopped nuts like walnuts or pecans to the topping mixture.
  • If you prefer a sweeter filling, feel free to add an extra tablespoon of sugar to the apples.
  • These bars can be stored in an airtight container at room temperature for up to 4 days or in the refrigerator for up to 7 days. They also freeze well for longer storage.
