Ingredients

  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tbsp matcha powder
  • ½ cup (100g) granulated sugar
  • ⅓ cup (80ml) vegetable oil
  • 2 large eggs
  • 1 cup (240ml) buttermilk (or substitute with 1 tbsp vinegar + milk)
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease it.
  2. Mix dry ingredients: In a large bowl, whisk together flour, baking powder, baking soda, salt, matcha powder, and sugar.
  3. Combine wet ingredients: In another bowl, whisk the oil, eggs, buttermilk, and vanilla extract until smooth.
  4. Blend the mixtures: Gradually fold the wet ingredients into the dry mixture, stirring just until combined. Avoid overmixing to maintain fluffiness.
  5. Fill muffin cups: Divide the batter evenly among the muffin cups, filling each about ¾ full.
  6. Bake: Place the tray in the oven and bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool and enjoy: Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
