Instructions

- Combine wet ingredients: In another bowl, whisk the oil, eggs, buttermilk, and vanilla extract until smooth.
- Blend the mixtures: Gradually fold the wet ingredients into the dry mixture, stirring just until combined. Avoid overmixing to maintain fluffiness.
- Fill muffin cups: Divide the batter evenly among the muffin cups, filling each about ¾ full.
- Bake: Place the tray in the oven and bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Cool and enjoy: Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
