Ingredients
Scale
For the Donuts:
- 2 ¼ tsp active dry yeast
- 1 cup warm milk (110°F)
- ¼ cup granulated sugar
- 4 cups all-purpose flour
- ½ tsp salt
- 2 large eggs
- 3 tbsp unsalted butter, softened
- 1 tsp vanilla extract
- Vegetable oil for frying
For the Crème Brûlée Filling:
- 1 cup heavy cream
- ½ cup whole milk
- ½ cup granulated sugar
- 4 large egg yolks
- 1 vanilla bean or 1 tsp vanilla extract
- 1 tbsp cornstarch (optional, for thicker filling)
For the Caramelized Topping:
- ½ cup granulated sugar
Instructions
- Make the Donut Dough:
In a bowl, combine warm milk, sugar, and yeast. Let it sit for 5-10 minutes until foamy. Mix in the flour, salt, eggs, butter, and vanilla. Knead until smooth (about 8-10 minutes), then let the dough rise in a greased bowl for 1-1.5 hours, until doubled in size. - Prepare the Crème Brûlée Filling:
Heat the heavy cream, milk, and half the sugar in a saucepan with the vanilla bean (or extract). Whisk egg yolks with the remaining sugar. Gradually add the hot cream to the eggs to temper them, then cook the mixture until it thickens. Strain and cool. - Fry the Donuts:
Roll out the dough, cut into donut shapes, and fry in preheated oil (350°F) for 2-3 minutes on each side until golden. Drain on paper towels. - Fill and Caramelize:
Once the donuts have cooled, pipe the crème brûlée custard into the center. Sprinkle sugar on top and use a kitchen torch to caramelize the sugar until golden and crispy.
Notes
- Storage: Store the donuts in an airtight container at room temperature for 1-2 days. Reheat gently if desired.
- Non-Dairy Option: You can use non-dairy milk like almond or oat milk for the custard filling.
- Tip: Make sure the oil temperature stays consistent to avoid greasy donuts. Use a thermometer to keep it around 350°F.
