Description

This eggnog bread is a moist, flavorful treat that captures the festive spirit of the holiday season. With the creamy richness of eggnog and a hint of warm spices, it’s the perfect loaf to enjoy with coffee or to gift to loved ones.


Ingredients

  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground nutmeg
  • ½ teaspoon ground cinnamon
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup eggnog (non-alcoholic)
  • 1 teaspoon vanilla extract
  • 1 tablespoon rum extract (optional, for added flavor)
  • ½ cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
  2. Combine Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, nutmeg, and cinnamon. Set aside.
  3. Mix Wet Ingredients: In a large bowl, beat the softened butter and sugar together until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the eggnog, vanilla extract, and rum extract (if using).
  4. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix. If you’re using nuts, fold them into the batter now.
  5. Bake the Bread: Pour the batter into the prepared loaf pan and smooth the top. Bake for 55–60 minutes or until a toothpick inserted into the center comes out clean.
  6. Cool and Serve: Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and serve.

Notes

  • For a richer flavor, allow the bread to rest overnight. The flavors will deepen and the texture will improve.
  • You can substitute the butter with vegetable oil for a slightly lighter texture.
  • Eggnog bread can be stored in an airtight container at room temperature for up to 4 days. For longer storage, wrap the bread in plastic wrap and freeze for up to 3 months.
  • This recipe can be easily doubled to make two loaves, perfect for sharing or gifting!
