- 2 large eggs
- 1 cup eggnog (non-alcoholic)

- ½ cup chopped pecans or walnuts (optional)
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
- Combine Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, nutmeg, and cinnamon. Set aside.
- Mix Wet Ingredients: In a large bowl, beat the softened butter and sugar together until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the eggnog, vanilla extract, and rum extract (if using).
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix. If you’re using nuts, fold them into the batter now.
- Bake the Bread: Pour the batter into the prepared loaf pan and smooth the top. Bake for 55–60 minutes or until a toothpick inserted into the center comes out clean.
- Cool and Serve: Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and serve.
Notes
- For a richer flavor, allow the bread to rest overnight. The flavors will deepen and the texture will improve.
- You can substitute the butter with vegetable oil for a slightly lighter texture.
- Eggnog bread can be stored in an airtight container at room temperature for up to 4 days. For longer storage, wrap the bread in plastic wrap and freeze for up to 3 months.
