Description

This Coffee Walnut Loaf Cake combines the bold, aromatic flavor of coffee with the rich, crunchy texture of walnuts, making it a perfect treat for any coffee lover. It's simple to make, moist, and the ideal cake to enjoy with a hot cup of coffee or tea.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup unsalted butter, melted
  • ½ cup brewed strong coffee, cooled
  • 1 teaspoon vanilla extract
  • 1 cup walnuts, chopped
  • ¼ cup milk

Instructions

  • Preheat the Oven & Prepare the Loaf Pan
Preheat your oven to 350°F (175°C). Grease and line a 9-inch loaf pan with parchment paper. This ensures easy removal of the cake once baked.
  • Combine Dry Ingredients
In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • Mix Wet Ingredients
In a separate bowl, whisk together the eggs, melted butter, cooled coffee, and vanilla extract until smooth.
  • Combine Wet and Dry Mixtures
Gradually add the wet ingredients to the dry ingredients and mix until just combined. Be careful not to overmix.
  • Add Walnuts
Fold in the chopped walnuts, ensuring they are evenly distributed throughout the batter.
  • Bake
Pour the batter into the prepared loaf pan. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool
Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • For extra flavor, you can drizzle the cooled cake with a coffee glaze made by mixing powdered sugar with a small amount of brewed coffee.
  • Ensure that the coffee used is strong to impart the best flavor to the cake.
  • If you don’t have walnuts, you can substitute with other nuts like pecans or almonds for a variation.
