Instructions
- Brown the Chicken:
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Season the chicken thighs with salt and pepper. Brown the chicken for 4-5 minutes on each side until golden. Remove and set aside. - Sauté Vegetables:

Let the chicken simmer for 30-40 minutes, or until fully cooked and tender (internal temperature should reach 165°F). Stir occasionally to ensure the sauce doesn’t burn. - Serve:
Remove the chicken from the sauce and let it rest for a few minutes. Serve the chicken with the sauce spooned over it, garnished with fresh parsley if desired. Pair with pasta, rice, or crusty bread.
