Ingredients

Scale
  • 2 boneless, skinless chicken breasts (about 1 lb)
  • ½ cup BBQ sauce (your favorite variety)
  • 2 flatbreads (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • ½ red onion, thinly sliced
  • 1 cup corn kernels (fresh or frozen)
  • 1 tablespoon olive oil (for brushing the flatbread)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Cook the Chicken:
Heat 1 tablespoon of olive oil in a skillet over medium heat. Season the chicken with salt and pepper, then cook for 6-7 minutes on each side until fully cooked through (165°F internal temperature). Remove from heat and shred or chop into bite-sized pieces.
  2. Prepare the Flatbreads:
Preheat your oven to 375°F (190°C). Place the flatbreads on a baking sheet. Brush each flatbread with a thin layer of olive oil to promote crispiness.
  3. Assemble the Flatbread:
Spread a layer of BBQ sauce on each flatbread. Evenly distribute the shredded chicken, sliced red onion, and corn on top. Sprinkle with shredded mozzarella cheese.
  4. Bake:
Place the flatbreads in the oven and bake for 10-12 minutes, or until the cheese is melted and bubbly, and the edges of the flatbread are crispy.
  5. Garnish and Serve:
Remove from the oven, garnish with fresh cilantro, and serve hot. Enjoy your delicious BBQ chicken flatbread!
