- 2 salmon fillets
- 1 lb baby potatoes, halved
- 2 tbsp olive oil
- 2 tbsp maple syrup
- 1 tbsp Dijon mustard
- 1 tsp garlic powder
- 1 tsp dried thyme (or fresh)
- Salt and pepper to taste
- Lemon wedges (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a sheet pan with parchment paper.
- Season the potatoes: Toss halved potatoes with olive oil, garlic powder, thyme, salt, and pepper. Arrange them on the sheet pan in a single layer.
- Prepare the glaze: In a small bowl, mix maple syrup, Dijon mustard, and a pinch of salt.
- Roast potatoes: Roast potatoes in the oven for 15 minutes.
- Glaze the salmon: Brush salmon fillets with the maple glaze.
- Add the salmon: After 15 minutes, remove the pan, flip potatoes, and place the salmon fillets on the same sheet pan. Return to the oven and roast for another 10 minutes, or until salmon is cooked through.
- Serve: Garnish with lemon wedges (optional) and serve immediately.
Notes
- For crispy potatoes, make sure they are spread out in a single layer and flip halfway through roasting.
- You can swap out baby potatoes for regular potatoes or sweet potatoes for a different twist.
