Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Prepare the Squash: Peel the butternut squash, remove the seeds, and cut it into 1-inch cubes.
- Toss with Oil and Spices: In a large bowl, toss the squash cubes with olive oil, salt, pepper, and your choice of cinnamon and nutmeg (optional).
- Arrange on Baking Sheet: Spread the seasoned squash in a single layer on a baking sheet. Make sure the cubes are not crowded to allow for even roasting.
- Roast: Roast for 25-30 minutes, flipping the squash halfway through. The squash should be fork-tender and golden-brown around the edges.
- Serve: Garnish with fresh thyme or rosemary for added flavor (optional) and serve hot.
Notes
- For added sweetness, drizzle with maple syrup during the last 5 minutes of roasting.
- For extra flavor, you can also sprinkle with parmesan cheese or toss with balsamic vinegar before serving.
