  • 1 medium butternut squash (peeled, seeded, and cut into 1-inch cubes)
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp ground cinnamon (optional)
  • 1/4 tsp ground nutmeg (optional)
  • Fresh thyme or rosemary (optional for garnish)

Instructions

  • Preheat the Oven: Preheat your oven to 400°F (200°C).
  • Prepare the Squash: Peel the butternut squash, remove the seeds, and cut it into 1-inch cubes.
  • Toss with Oil and Spices: In a large bowl, toss the squash cubes with olive oil, salt, pepper, and your choice of cinnamon and nutmeg (optional).
  • Arrange on Baking Sheet: Spread the seasoned squash in a single layer on a baking sheet. Make sure the cubes are not crowded to allow for even roasting.
  • Roast: Roast for 25-30 minutes, flipping the squash halfway through. The squash should be fork-tender and golden-brown around the edges.
  • Serve: Garnish with fresh thyme or rosemary for added flavor (optional) and serve hot.

Notes

  • For added sweetness, drizzle with maple syrup during the last 5 minutes of roasting.
  • For extra flavor, you can also sprinkle with parmesan cheese or toss with balsamic vinegar before serving.
  • Ensure the squash cubes are evenly cut for uniform roasting. If they’re too big or uneven, some cubes may burn while others remain undercooked.
