For the Crust:
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- 6 tablespoons unsalted butter, melted
For the Filling:
- 16 oz cream cheese, softened
- ⅓ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ¼ cup sour cream
- 2 tbsp brewed coffee, cooled
- 1 tbsp instant coffee granules
- 1 tbsp all-purpose flour
For the Whipped Cream Topping (Optional):
- ¼ cup heavy whipping cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
Instructions
Prepare the Crust:
- Preheat the oven to 325°F (163°C).
- Mix graham cracker crumbs, sugar, and melted butter in a bowl until combined.
- Press about 1 tablespoon of the mixture into the bottom of each muffin cup (lined with paper liners).
- Bake for 5-7 minutes and set aside to cool.
2. Make the Filling:
- Beat softened cream cheese in a large bowl until smooth.
- Add sugar, vanilla, and mix until smooth.
- Beat in eggs one at a time, followed by sour cream, brewed coffee, instant coffee granules, and flour.
- Spoon the filling over the cooled crusts, filling each cup almost to the top.
3. Bake:
- Bake for 20-25 minutes or until the centers are set but still slightly jiggly.
- Let cool for 10 minutes before transferring to a wire rack. Chill in the fridge for 4 hours or overnight.
4. Whipped Cream (Optional):
- Whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Top each mini cheesecake with a dollop of whipped cream before serving.
