For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted

For the Filling:

  • 16 oz cream cheese, softened
  • ⅓ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ cup sour cream
  • 2 tbsp brewed coffee, cooled
  • 1 tbsp instant coffee granules
  • 1 tbsp all-purpose flour

For the Whipped Cream Topping (Optional):

  • ¼ cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Instructions

Prepare the Crust:

  • Preheat the oven to 325°F (163°C).
  • Mix graham cracker crumbs, sugar, and melted butter in a bowl until combined.
  • Press about 1 tablespoon of the mixture into the bottom of each muffin cup (lined with paper liners).
  • Bake for 5-7 minutes and set aside to cool.

2. Make the Filling:

  • Beat softened cream cheese in a large bowl until smooth.
  • Add sugar, vanilla, and mix until smooth.
  • Beat in eggs one at a time, followed by sour cream, brewed coffee, instant coffee granules, and flour.
  • Spoon the filling over the cooled crusts, filling each cup almost to the top.

3. Bake:

  • Bake for 20-25 minutes or until the centers are set but still slightly jiggly.
  • Let cool for 10 minutes before transferring to a wire rack. Chill in the fridge for 4 hours or overnight.

4. Whipped Cream (Optional):

  • Whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  • Top each mini cheesecake with a dollop of whipped cream before serving.
