- 2 cups fresh or frozen strawberries (thawed if using frozen)
- 1/2 cup granulated sugar (or honey for a natural sweetener)
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon vanilla extract (optional)
- 1/4 cup water
- 1 tablespoon cornstarch (optional, for thickening)
Instructions
- Prepare the Strawberries: Hull and chop the fresh strawberries into halves or quarters. If using frozen strawberries, thaw them first and chop into pieces.
- Simmer: In a medium saucepan, combine the strawberries, sugar, and water. Stir to combine and bring to a simmer over medium heat.
- Mash and Thicken: Let the strawberries cook for 10-15 minutes, occasionally mashing them with a spoon. For a thicker sauce, add the cornstarch mixed with a little water and stir to combine.
- Finish the Sauce: Stir in the lemon juice and vanilla extract. Continue to simmer for 2-3 more minutes until the sauce reaches your desired consistency.
- Cool and Serve: Remove from heat and allow the sauce to cool. It will thicken slightly as it cools. Use immediately or refrigerate for later use.
Notes
- If you prefer a smoother sauce, blend it using an immersion blender or regular blender after it has cooled.
- You can easily adjust the sweetness by adding more or less sugar, depending on your preference.
- The sauce can be made ahead of time and stored in the refrigerator for up to 1 week or frozen for up to 3 months.
