- 12 oz spaghetti or linguine
For the Cod and Sauce:
- 1 lb fresh cod fillets
- 2 tbsp olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 1 tsp dried oregano
- ½ tsp red pepper flakes (optional)
- Salt and pepper to taste
- Fresh basil leaves for garnish
- Grated Parmesan cheese for serving (optional)
Instructions
- Cook the Pasta: Boil a large pot of salted water. Add the spaghetti or linguine and cook according to package instructions until al dente (8-10 minutes). Reserve 1 cup of pasta water, then drain and set aside.
- Prepare the Cod: In a large skillet, heat olive oil over medium heat. Season the cod fillets with salt and pepper, then sear for 3-4 minutes on each side until golden and cooked through. Remove and set aside.
- Sauté Aromatics: In the same skillet, add chopped onion and sauté for 3-4 minutes until translucent. Add minced garlic and cook for another minute.
- Make the Sauce: Pour in the crushed tomatoes, oregano, and red pepper flakes (if using). Season with salt and pepper, then let it simmer for 5-7 minutes.
- Combine: Flake the cod into bite-sized pieces and return it to the skillet. Add the drained pasta and toss gently, adding reserved pasta water as needed to loosen the sauce.
