For the Pasta:

  • 12 oz spaghetti or linguine

For the Cod and Sauce:

  • 1 lb fresh cod fillets
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 1 tsp dried oregano
  • ½ tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh basil leaves for garnish
  • Grated Parmesan cheese for serving (optional)

Instructions

  • Cook the Pasta: Boil a large pot of salted water. Add the spaghetti or linguine and cook according to package instructions until al dente (8-10 minutes). Reserve 1 cup of pasta water, then drain and set aside.
  • Prepare the Cod: In a large skillet, heat olive oil over medium heat. Season the cod fillets with salt and pepper, then sear for 3-4 minutes on each side until golden and cooked through. Remove and set aside.
  • Sauté Aromatics: In the same skillet, add chopped onion and sauté for 3-4 minutes until translucent. Add minced garlic and cook for another minute.
  • Make the Sauce: Pour in the crushed tomatoes, oregano, and red pepper flakes (if using). Season with salt and pepper, then let it simmer for 5-7 minutes.
  • Combine: Flake the cod into bite-sized pieces and return it to the skillet. Add the drained pasta and toss gently, adding reserved pasta water as needed to loosen the sauce.
  • Serve: Plate the pasta, garnish with fresh basil and Parmesan cheese, and enjoy!
