  • 1 ½ cups graham cracker crumbs

  • ¼ cup granulated sugar

For the Cheesecake Filling:

  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • ½ cup Baileys Irish Cream
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream

Instructions

  • Prepare the Crust:
    • Preheat your oven to 325°F (160°C).
    • In a bowl, mix graham cracker crumbs, melted butter, and sugar until well combined. Press the mixture into the bottom of a 9-inch springform pan.
    • Bake for 10 minutes. Remove and let cool.
  • Make the Cheesecake Filling:
    • In a large bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar and mix until combined.
    • Pour in Baileys and vanilla, mixing until smooth.
    • In a separate bowl, whip the heavy cream to soft peaks, then gently fold it into the cream cheese mixture until fully combined.
  • Assemble the Cheesecake:
    • Pour the cheesecake filling over the cooled crust, smoothing the top.
    • Chill in the refrigerator for at least 4 hours or overnight until set.
  • Serve:
    • Remove from the springform pan. Slice and serve chilled, optionally topped with chocolate sauce or whipped cream.
