- 1 cup Greek yogurt
- 2 tablespoons lemon juice (freshly squeezed)

Instructions
- Boil the Potatoes:
- In a large pot, add the baby potatoes and cover them with cold water. Add a pinch of salt and bring to a boil over medium-high heat.
- Once boiling, reduce heat to medium and cook for about 15-20 minutes, or until the potatoes are fork-tender.
- Preheat the Oven:
- While the potatoes are boiling, preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Smash the Potatoes:
- Drain the boiled potatoes and let them cool slightly. On a clean surface or baking sheet, place the potatoes a few inches apart.
- Using the bottom of a glass or a potato masher, gently smash each potato until it flattens but remains intact.
- Season and Bake:
- Drizzle the smashed potatoes with olive oil, then sprinkle with salt, black pepper, and garlic powder.
- Bake in the preheated oven for 20-25 minutes, or until the edges are crispy and golden brown.
- Prepare the Dip:
- In a bowl, combine Greek yogurt, lemon juice, lemon zest, minced garlic, salt, and pepper. Mix well until smooth. Adjust seasoning to taste.
- Serve:
- Remove the potatoes from the oven and let them cool for a few minutes. Serve warm, garnished with fresh herbs, alongside the lemon garlic yogurt dip.
