For the Potatoes:

  • 2 pounds baby potatoes (Yukon gold or red)
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • Fresh herbs (optional, for garnish)

For the Lemon Garlic Yogurt Dip:

  • 1 cup Greek yogurt
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 teaspoon lemon zest
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Fresh dill or parsley (optional, for garnish)

Instructions

  • Boil the Potatoes:
    • In a large pot, add the baby potatoes and cover them with cold water. Add a pinch of salt and bring to a boil over medium-high heat.
    • Once boiling, reduce heat to medium and cook for about 15-20 minutes, or until the potatoes are fork-tender.
  • Preheat the Oven:
    • While the potatoes are boiling, preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Smash the Potatoes:
    • Drain the boiled potatoes and let them cool slightly. On a clean surface or baking sheet, place the potatoes a few inches apart.
    • Using the bottom of a glass or a potato masher, gently smash each potato until it flattens but remains intact.
  • Season and Bake:
    • Drizzle the smashed potatoes with olive oil, then sprinkle with salt, black pepper, and garlic powder.
    • Bake in the preheated oven for 20-25 minutes, or until the edges are crispy and golden brown.
  • Prepare the Dip:
    • In a bowl, combine Greek yogurt, lemon juice, lemon zest, minced garlic, salt, and pepper. Mix well until smooth. Adjust seasoning to taste.
  • Serve:
    • Remove the potatoes from the oven and let them cool for a few minutes. Serve warm, garnished with fresh herbs, alongside the lemon garlic yogurt dip.

Notes

  • For an extra flavor boost, consider adding grated Parmesan cheese on top of the potatoes before baking.
  • These potatoes can be made ahead of time and reheated in the oven for serving.
