- 8 oz (225g) cream cheese, softened
- 1 cup (240ml) sour cream
- 2 cups (200g) shredded cheese (cheddar or a blend)
- 1 cup (100g) breadcrumbs (or gluten-free alternative)
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- Salt and pepper, to taste
- Fresh parsley, for garnish (optional)
Instructions
- Prep the Oven: Preheat your oven to 350°F (175°C).
- Sauté Vegetables: In a large skillet, heat olive oil and butter over medium heat. Add the chopped onion and cook until translucent (about 4-5 minutes). Stir in garlic and mushrooms, cooking until mushrooms are tender and moisture is released (about 8-10 minutes). Season with salt and pepper.
- Mix Cheese: In a bowl, combine softened cream cheese and sour cream. Stir until smooth. Then mix in 1 ½ cups of shredded cheese.
- Combine Ingredients: Add the sautéed mushroom mixture to the cheese mixture, stirring until fully combined.
- Transfer and Top: Pour the mixture into a greased casserole dish. Sprinkle the remaining ½ cup of shredded cheese and breadcrumbs on top.
- Bake: Place the casserole in the oven and bake for 25-30 minutes, until the top is golden brown and bubbly.
