Ingredients

Scale
  • 8 oz (225g) fresh mushrooms, sliced
  • 1 cup (150g) onion, chopped
  • 2 cloves garlic, minced
  • 8 oz (225g) cream cheese, softened
  • 1 cup (240ml) sour cream
  • 2 cups (200g) shredded cheese (cheddar or a blend)
  • 1 cup (100g) breadcrumbs (or gluten-free alternative)
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  • Prep the Oven: Preheat your oven to 350°F (175°C).
  • Sauté Vegetables: In a large skillet, heat olive oil and butter over medium heat. Add the chopped onion and cook until translucent (about 4-5 minutes). Stir in garlic and mushrooms, cooking until mushrooms are tender and moisture is released (about 8-10 minutes). Season with salt and pepper.
  • Mix Cheese: In a bowl, combine softened cream cheese and sour cream. Stir until smooth. Then mix in 1 ½ cups of shredded cheese.
  • Combine Ingredients: Add the sautéed mushroom mixture to the cheese mixture, stirring until fully combined.
  • Transfer and Top: Pour the mixture into a greased casserole dish. Sprinkle the remaining ½ cup of shredded cheese and breadcrumbs on top.
  • Bake: Place the casserole in the oven and bake for 25-30 minutes, until the top is golden brown and bubbly.
  • Serve: Let it cool for a few minutes before garnishing with fresh parsley and serving.

Notes

  • Make-Ahead: You can prepare the casserole a day in advance. Just cover and refrigerate until you’re ready to bake.
  • Freezing: This casserole freezes well. Store in an airtight container for up to 2-3 months.
  • Variations: Feel free to add cooked spinach or cooked chicken for a heartier version.
