For the Filling:
- ½ cup almond paste
- ¼ cup unsalted butter, softened
- 2 tsp ground cinnamon
- ⅓ cup brown sugar
For the Glaze:
- 1 cup powdered sugar
- 2–3 tbsp milk
- ½ tsp almond extract

- Prepare the Dough:
- In a small bowl, mix warm milk and sugar. Sprinkle yeast over the top and let sit for 5-10 minutes until frothy.
- In a large mixing bowl, whisk flour and salt. Create a well in the center and add the melted butter, egg, and yeast mixture.
- Mix until a rough dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.
- First Rise:
- Place dough in a greased bowl, cover with a towel, and let rise in a warm place for 1-2 hours until doubled in size.
- Prepare the Filling:
- In a bowl, combine almond paste, softened butter, cinnamon, and brown sugar until well mixed.
- Roll and Shape:
- Roll out the dough into a rectangle (about ¼ inch thick). Spread the filling evenly over the dough.
- Roll the dough tightly from the longer side and cut into 12 equal slices.
- Second Rise:
- Place rolls in a greased 9×13 inch baking dish. Cover and let rise for 30-45 minutes until puffy.
- Bake:
- Preheat the oven to 350°F (175°C) and bake rolls for 25-30 minutes until golden brown.
- Glaze:
- While the rolls are baking, mix powdered sugar, milk, and almond extract to form a glaze. Drizzle over warm rolls before serving.
