  • ½ tsp salt

For the Filling:

  • ½ cup almond paste
  • ¼ cup unsalted butter, softened
  • 2 tsp ground cinnamon
  • ⅓ cup brown sugar

For the Glaze:

  • 1 cup powdered sugar
  • 23 tbsp milk
  • ½ tsp almond extract

Instructions

  1. Prepare the Dough:
    • In a small bowl, mix warm milk and sugar. Sprinkle yeast over the top and let sit for 5-10 minutes until frothy.
    • In a large mixing bowl, whisk flour and salt. Create a well in the center and add the melted butter, egg, and yeast mixture.
    • Mix until a rough dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.
  2. First Rise:
    • Place dough in a greased bowl, cover with a towel, and let rise in a warm place for 1-2 hours until doubled in size.
  3. Prepare the Filling:
    • In a bowl, combine almond paste, softened butter, cinnamon, and brown sugar until well mixed.
  4. Roll and Shape:
    • Roll out the dough into a rectangle (about ¼ inch thick). Spread the filling evenly over the dough.
    • Roll the dough tightly from the longer side and cut into 12 equal slices.
  5. Second Rise:
    • Place rolls in a greased 9×13 inch baking dish. Cover and let rise for 30-45 minutes until puffy.
  6. Bake:
    • Preheat the oven to 350°F (175°C) and bake rolls for 25-30 minutes until golden brown.
  7. Glaze:
    • While the rolls are baking, mix powdered sugar, milk, and almond extract to form a glaze. Drizzle over warm rolls before serving.
