  • 2 (8 oz) packages cream cheese, softened
  • 1 cup canned pumpkin puree
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground ginger
  • ¼ tsp salt

Instructions

  • Prepare the Crust: Preheat your oven to 350°F (175°C). In a bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined. Press the mixture firmly into the bottom of a greased 9×13-inch baking dish. Bake for 10 minutes, then remove and let cool.
  • Make the Filling: In a large mixing bowl, beat the softened cream cheese until smooth. Add the pumpkin puree, sugar, eggs, vanilla, and spices. Mix until fully combined and creamy.
  • Combine and Bake: Pour the filling over the cooled crust, spreading it evenly. Bake in the preheated oven for 25-30 minutes, or until the center is set but slightly jiggly.
  • Cool and Serve: Remove from the oven and let cool at room temperature for about an hour. Refrigerate for at least 2 hours before cutting into bars. Serve chilled and enjoy!
