For the Cheesecake Filling:

  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup heavy cream
  • ½ cup unsweetened cocoa powder
  • 1 cup dark chocolate chips, melted

For the Cherry Topping:

  • 1 can pitted cherries in syrup (or fresh cherries)
  • ¼ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

For Garnish:

  • Whipped cream
  • Chocolate shavings
  • Fresh cherries

Instructions

  • Prepare the Crust:
    • Preheat the oven to 350°F (175°C).
    • Combine crushed cookies, melted butter, and sugar in a bowl. Press into a 9-inch springform pan. Bake for 10 minutes, then cool.
  • Make the Filling:
    • In a large bowl, beat cream cheese and sugar until smooth. Add vanilla, then mix in eggs one at a time.
    • Fold in sour cream, heavy cream, cocoa powder, and melted chocolate until well combined.
  • Bake:
    • Pour filling into the cooled crust and bake for 50-60 minutes until the edges are set but the center jiggles slightly.
    • Turn off the oven and let the cheesecake cool inside for an hour. Refrigerate for at least 4 hours or overnight.
  • Prepare the Cherry Topping:
    • In a saucepan, combine cherries, sugar, cornstarch, and lemon juice. Heat until thickened, then cool.
  • Assemble:
    • Once chilled, top the cheesecake with cherry sauce, dollops of whipped cream, chocolate shavings, and fresh cherries.

Notes

  • For a richer flavor, add a splash of cherry liqueur to the filling.
