Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • Cream Butter and Sugars: In a large bowl, beat together 1 cup softened butter, 1 cup granulated sugar, and 1 cup brown sugar until light and fluffy, about 3-4 minutes.
  • Add Eggs and Vanilla: Mix in 2 large eggs one at a time, followed by 2 teaspoons vanilla extract, ensuring everything is well combined.
  • Combine Dry Ingredients: In a separate bowl, whisk together 3 cups flour, 1 teaspoon baking soda, and 1 teaspoon salt. Gradually add the dry mixture to the wet ingredients, mixing just until combined.
  • Prepare Cheesecake Filling: In a small bowl, beat 8 oz cream cheese until smooth.
  • Assemble Cookies: Using an ice cream scoop, take a portion of cookie dough, flatten it in your hand, and place a teaspoon of cream cheese filling and a teaspoon of salted caramel sauce in the center. Fold the dough around the filling, rolling it into a ball. Place on the prepared baking sheets.
  • Bake: Bake for 10-12 minutes or until the edges are lightly golden. Allow cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack.
