- 1 lb ground beef or turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- Optional toppings: Shredded cheese, sour cream, green onions, or cilantro
Instructions
- Brown the Meat (optional): In a skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat and transfer to the crockpot.
- Add Vegetables: To the crockpot, add chopped onion, garlic, bell pepper, kidney beans, black beans, diced tomatoes, and tomato sauce.
- Season: Sprinkle in chili powder, cumin, smoked paprika, salt, and pepper. Stir well to combine all ingredients.
- Cook: Cover and set the crockpot to low for 6-8 hours or high for 3-4 hours.
- Serve: Once cooked, stir the chili and taste for seasoning. Serve hot, topped with your choice of garnishes.

- For a vegetarian option, omit the meat and use additional beans or lentils.
