  • 4 boneless, skinless chicken breasts (about 6 ounces each)
  • 4 cups fresh spinach, washed and chopped
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1 cup grated Parmesan cheese
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  • Season the Chicken: Pat the chicken dry and season both sides with salt, pepper, and Italian seasoning.
  • Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 5-7 minutes per side until golden brown and fully cooked (internal temperature should reach 165°F/75°C). Remove and set aside.
  • Sauté Garlic and Spinach: In the same skillet, add minced garlic and sauté for about 30 seconds. Add spinach and cook until wilted, about 2-3 minutes.
  • Make the Sauce: Pour in heavy cream and stir to combine. Let it simmer for 2-3 minutes, then add Parmesan cheese, stirring until melted and creamy.
  • Combine: Return the chicken to the skillet, spoon the creamy spinach sauce over it, and heat through for a couple of minutes.
  • Serve: Garnish with fresh herbs and serve hot over rice or pasta.

Notes

  • For added flavor, consider adding sun-dried tomatoes or mushrooms to the spinach mixture.
  • You can use chicken thighs instead of breasts for a richer taste.
