  • 8 ounces mushrooms, sliced (cremini or button)
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Season the Chicken: Pat chicken dry and season with salt and pepper on both sides.
  • Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Add chicken and cook for 5-7 minutes on each side until golden and cooked through. Remove and keep warm.
  • Sauté the Mushrooms and Garlic: In the same skillet, add mushrooms and sauté for about 5-6 minutes until browned. Add minced garlic and cook for 1-2 minutes until fragrant.
  • Create the Sauce: Pour in chicken broth and scrape up any browned bits. Stir in heavy cream and thyme, simmer for 5 minutes until slightly thickened. Adjust seasoning.
  • Combine and Serve: Return chicken to the skillet, spoon sauce over, and garnish with parsley. Serve hot over rice or pasta.
