  • For the Shrimp:

    • 1 lb large shrimp, peeled and deveined
    • 2 tablespoons Cajun seasoning
    • 2 tablespoons olive oil
    • 1 bell pepper, diced
    • 1 small onion, diced
    • 3 cloves garlic, minced
    • 1 cup diced tomatoes (canned or fresh)
    • 2 green onions, sliced (for garnish)
    • Fresh parsley, chopped (for garnish)

Instructions

  • Prepare the Grits: In a medium saucepan, bring chicken broth to a boil. Slowly whisk in the grits, reduce heat to low, and cook for about 20 minutes, stirring frequently until thickened. Stir in the cheddar cheese, butter, salt, and pepper. Keep warm.

  • Cook the Shrimp: In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, sautéing until softened (about 5 minutes). Add garlic and cook for another minute until fragrant.

  • Season the Shrimp: Sprinkle the Cajun seasoning over the shrimp and toss to coat. Add the shrimp to the skillet, cooking for 3-4 minutes until they turn pink and are cooked through.

  • Add Tomatoes: Stir in the diced tomatoes and cook for an additional 2 minutes, allowing the flavors to meld.

  • Serve: Spoon the cheesy grits onto plates and top with the Cajun shrimp mixture. Garnish with green onions and fresh parsley.
