- 8 oz penne or fusilli pasta
- 2 boneless chicken breasts, cubed
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella balls, halved
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil leaves, for garnish
- Grated Parmesan cheese (optional, for serving)
Instructions
- Cook the Pasta:
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
- Cook the Chicken:
- In a large skillet, heat olive oil over medium heat. Season the cubed chicken with salt and pepper. Add to the skillet and cook until browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
- Sauté the Garlic and Tomatoes:
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Then, add the halved cherry tomatoes and cook for another 3-4 minutes until they begin to soften.
- Combine Ingredients:
- Return the cooked chicken to the skillet, and stir in the cooked pasta, Italian seasoning, and fresh mozzarella. Toss everything together until well combined and heated through. Cook for an additional 2-3 minutes until the cheese starts to melt.
- Serve:
- Garnish with fresh basil leaves and a sprinkle of grated Parmesan cheese, if desired. Serve warm and enjoy!
