For the Cheesesteak Filling:

  • 1 lb (450g) thinly sliced beef (such as ribeye or sirloin)
  • 1 tablespoon olive oil
  • 1 large onion, sliced
  • 1 large green bell pepper, sliced
  • 2 cloves garlic, minced
  • Salt and pepper to taste

For the Provolone Sauce:

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 1 cup grated provolone cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste

For the Tortellini:

  • 12 oz (340g) cheese tortellini (fresh or frozen)

Instructions

  • Prepare the Cheesesteak Filling:
    • Heat olive oil in a large skillet over medium-high heat. Add the sliced beef and cook until browned, about 3-4 minutes per side. Remove from the skillet and set aside.
    • In the same skillet, add the sliced onion and green bell pepper. Cook until softened, about 5-6 minutes. Add the minced garlic and cook for an additional minute.
    • Return the cooked beef to the skillet. Season with salt and pepper, and mix everything together. Set aside.
  • Make the Provolone Sauce:
    • In a medium saucepan, melt butter over medium heat. Stir in the flour and cook for 1-2 minutes until bubbly and lightly golden.
    • Gradually whisk in the milk, and cook, stirring constantly, until the mixture begins to thicken.
    • Stir in the provolone cheese and Parmesan cheese, and continue stirring until the cheeses are melted and the sauce is smooth. Season with garlic powder, onion powder, salt, and pepper.
  • Cook the Tortellini:
    • Bring a large pot of salted water to a boil. Cook the cheese tortellini according to package instructions until al dente. Drain and set aside.
  • Combine and Serve:
    • In a large mixing bowl, toss the cooked tortellini with the cheesesteak filling and provolone sauce until well combined.
    • Serve immediately, garnished with additional grated Parmesan cheese if desired.

Notes

  • For added flavor, consider topping the dish with a sprinkle of fresh parsley or a few dashes of hot sauce.
  • If you prefer a spicier kick, you can add sliced jalapeños to the cheesesteak filling.
