For the Provolone Sauce:
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups milk
- 1 cup grated provolone cheese
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
For the Tortellini:
- 12 oz (340g) cheese tortellini (fresh or frozen)
Instructions
- Prepare the Cheesesteak Filling:
- Heat olive oil in a large skillet over medium-high heat. Add the sliced beef and cook until browned, about 3-4 minutes per side. Remove from the skillet and set aside.
- In the same skillet, add the sliced onion and green bell pepper. Cook until softened, about 5-6 minutes. Add the minced garlic and cook for an additional minute.
- Return the cooked beef to the skillet. Season with salt and pepper, and mix everything together. Set aside.
- Make the Provolone Sauce:
- In a medium saucepan, melt butter over medium heat. Stir in the flour and cook for 1-2 minutes until bubbly and lightly golden.
- Gradually whisk in the milk, and cook, stirring constantly, until the mixture begins to thicken.
- Stir in the provolone cheese and Parmesan cheese, and continue stirring until the cheeses are melted and the sauce is smooth. Season with garlic powder, onion powder, salt, and pepper.
- Cook the Tortellini:
- Bring a large pot of salted water to a boil. Cook the cheese tortellini according to package instructions until al dente. Drain and set aside.
- Combine and Serve:
- In a large mixing bowl, toss the cooked tortellini with the cheesesteak filling and provolone sauce until well combined.
- Serve immediately, garnished with additional grated Parmesan cheese if desired.

- For added flavor, consider topping the dish with a sprinkle of fresh parsley or a few dashes of hot sauce.
- If you prefer a spicier kick, you can add sliced jalapeños to the cheesesteak filling.
